Early Risk Determinants and Later Health Outcomes

This workshop, discussed in the American Journal of Clinical Nutrition (2009;89), stemmed from a quest to consolidate current knowledge on the early determinants of maternal and child health outcomes related to obesity, cardiovascular disease risk, and neurodevelopment. The primary goal was to delineate the relative influence of genetics and environmental factors.  
 
Functional Foods for Health Promotion: State-of-the-Science on Dietary Flavonoids

This article, published in Nutrition Reviews (2009;67:736–743), indicates that dietary flavonoids, particularly flavanols, show promising potential for reducing cardiovascular disease risk via reduction of inflammation and improvement in vascular function.
 
Guidance for Assessing the Probiotics Beneficial Effects: How to Fill the GAP (ILSI Europe Publication)

Based on the existing evidence, concrete examples of demonstration of benefits and gaps are listed in this article published in this supplement to the Journal of Nutrition (2010;140), and guidelines and recommendations are defined that should help design the next generation of probiotic studies.
 
Kinetic and Mechanistic Data for a Human Physiologically Bases Pharmacokinetic (PBPK) Model for Acrylamide

Despite gaps and limitations to the database, model parameters have been estimated to provide a relatively consistent description of the kinetics of acrylamide and glycidamide using a single set of values (with minor adjustments in some cases). This review, published in Advances in Experimental Medicine and Biology (2005;561:117–125), discusses the PBPK model for acrylamide.
 
Human Exposure and Internal Dose Assessments of Acrylamide in Food

This review, published in Food and Chemical Toxicology (2005;43:365–410), provides a framework contributing to the risk assessment of acrylamide in food. It is based on the outcome of the ILSI Europe FOSIE process, a risk assessment framework for chemicals in foods and adds to the overall framework by focusing especially on exposure assessment and internal dose assessment of acrylamide in food.
 
Acrylamide in Food Workshop 2004: Priority Research Needs for Toxicology and Metabolic Consequences

This article discusses the determination of modes of action and appropriate dose metrics for acrylamide’s principal toxic effects, the examination of potential effects from perinatal exposures, the characterization of the dose-response relationship for germ cell toxicity, and the development of a human PBPK model.
 
Rat Kidney Pathology Induced by Chronic Exposure to Fumonisin B1 Includes Rare Variants of Renal Tubule Tumor

The carcinogenicity of fumonisin B1 (FB1), a worldwide contaminant of corn produced by the Fusaria species of fungi, has been tested recently in 2-year feeding studies in Fischer F344 rats and B6C3F1 mice. Outcomes of this study were published in Toxicologic Pathology (2001;29:379–386).
 
Threshold Dose for Peanut: Risk Characterization Based Upon Diagnostic Oral Challenge of a Series of 286 Peanut-Allergic Individuals

Clinical records of 286 consecutive patients reacting positively with objective symptoms to double-blind, placebo-controlled oral peanut challenges at University Hospital, Nancy, France were examined for individual no observed adverse effect levels (NOAELs) and lowest observed adverse effect levels (LOAELs). This study was published in Food and Chemical Toxicology (2010;48:814–819).
 
Proceedings From the ILSI North America International Conference on the Toxicology of Fumonism

This conference aimed to assemble, present, and critically review the available data on the chemistry, toxicities, and mechanisms of the action of the fumonisin mycotoxins. Proceedings of the event were published in Environmental Health Perspectives (2001;109 S-2).
 
Implications of Apoptosis for Toxicity, Carcinogenicity, and Risk Assessment: Fumonism B1 as an Example

The rates of cell proliferation and cell loss in conjunction with the differentiation status of a tissue are among the many factors contributing to carcinogenesis. Findings of this study were published in Toxicological Sciences (2001;61:6–17).
