IOM Food Forum Workshop - Leveraging Food Technology for Obesity Prevention and Reduction Efforts

The Food Forum of the Institute of Medicine (IOM) convened a workshop on the current and potential role of food technology in addressing today’s most critical public health challenge — overweight and obesity. This 2-day workshop explored the various technological advances within the modern food system and how they might interact with behavioral interventions, economics, innovation, and design. Behaviorists, government scientists, and food industry scientists considered the successes and challenges of developing and incorporating technological advances to produce more nutritious foods.

The 2-day workshop included presentations on the following topics:

  • Industry Successes and Challenges in Leveraging Food Technology to Produce Healthier Food Choices
  • USDA Successes and Challenges in Developing New Technologies for Healthier Food Choices
  • Food Technology: Directions for the Future
