Pathogen and spoilage persistence in the processing environment and food products: Where, why and how do we know?

This session will highlight the need to address microbial persistence throughout the food chain, from primary production to processing, including the importance of persistence in foodborne disease outbreaks and regulatory implications. Speakers will discuss microbial persistence and factors affecting the persistence of Listeria and Salmonella, the role of pathogen persistence in foodborne disease outbreaks, and persistence of spoilage microorganisms.

Attribution of foodborne illness/disease

Attribution analysis is the science of estimating the relative contribution of different commodities to the burden of foodborne disease. The second session, “Attribution of foodborne illness/disease,” will discuss a more recent approach used to prioritize efforts to control foodborne diseases directed toward the food sources most commonly associated with human disease. The symposium will address the newest estimates of the burden of foodborne illness in the United States and introduce the concept of attribution analysis.
